Sweet and Spicy {Crockpot} Pork Tacos

This crockpot recipe was printed in our newspaper a few weeks ago and it’s delicious {or da-wishus, as Tate would say}!  It has a bit of a kick to it so if your kids are really picky about spicy things, you might want to only use half of the first two ingredients.  My kids ate it as is and really liked it.  And leftovers the next day?  Just as good.  Or freeze them for a quick weeknight meal another time.



Slow-Cooker Sweet and Spicy Shredded Pork Filling



2 canned chipotle chiles in adobo sauce {2 chiles, not 2 cans}

3 tablespoons ancho chile powder

3/4 pineapple juice

4 garlic cloves, peeled

1 tablespoon light brown sugar

1/4 teaspoon ground cumin

1/8 teaspoon ground cloves

1 3-pound boneless pork butt roast {I used a pork loin because it’s less fatty}

salt and pepper, to taste

1 tablespoon fresh lime juice plus extra as needed

tortillas and cilantro for serving



Puree chipotle chiles, ancho chile powder, pineapple juice, garlic, sugar, cumin and cloves in blender until smooth, about 30 seconds.  Transfer to slow cooker.  Season pork with salt and pepper, add to slow cooker and coat evenly with sauce mixture.  Cover and cook until pork is tender, 9 to 11 hours on Low, or 5 to 7 hours on High.



Remove pork from slow cooker and use two forks to shred.  Remove fat from surface of liquid left in slow cooker and return shredded meat to slow cooker.  Stir in lime juice and season with salt and pepper.  Add more lime juice as desired.



Serve with tortillas, cilantro and lime.
