Groundhog Day

My kids will be celebrating Groundhog Day 2012 with these cute little pudding snacks.

Inspiration found here.  I changed it up a little and used a Mound for the groundhog.  Had I had more time to run to the store, I would have used edible eyes.  His white icing eyes make him look a little shell-shocked, don’t they?  Maybe he’s surprised by the fact that it already feels like spring here in Texas … no prediction needed.  He’s worried he might be out of a job.



We don’t always celebrate Groundhog Day but we have made these before as well.
