During the hot summer months here in the south, iced tea is my favorite thing to drink. It’s refreshing, there are all kinds of fun variations you can make, and everyone in our family loves it. This earl grey iced tea recipe is sweetened and flavored with homemade lemon mint syrup and it’s a delicious way to cool off on a hot summer day!
As fall approaches, I’m always looking for ways to use up my ever-growing, ever-expanding mint patch. It’s amazing how mint can take over a garden or a pot. It’s one of my favorite things to grow but sometimes it grows beyond my uses and needs! There have been many summers when I’ve told my friends to help themselves to as much mint as they need all summer long!
This flavorful earl grey tea is one of my favorite ways to use homegrown mint.
To make it, you need just a few ingredients: earl grey tea bags, water, sugar, mint, and lemon. {Full measurements and instructions can be found in the printable recipe card found further down in this post.}
While the tea is brewing, you can mix up the lemon mint syrup. Make a large batch, if desired, and store the leftovers in an airtight container in the fridge so you can quickly whip up a pitcher of this tea any time. This syrup is perfect for sweetening any type of iced tea so use it with any type tea bags you have in the pantry.

Earl Grey Iced Tea with Lemon Mint Syrup
A delicious and refreshing earl grey iced tea recipe flavored with lemon mint syrup.
Ingredients
- 7 earl grey tea bags
- 8 cups water
- 1 cup sugar
- 1 cup fresh mint, packed
- 1 lemon, zested and cut into pieces
- 1 cup water
Instructions
- Bring 4 cups of water to a boil and pour over the tea bags. Let steep for 5-6 minutes or until the tea is dark.
- Add 4 cups of cold water and chill.
- While the tea is steeping and chilling, in a small saucepan, combine sugar, mint, lemon zest and pieces, and 1 cup of water.
- Bring to a boil and stir to dissolve the sugar.
- Reduce heat and simmer for 2 minutes.
- Remove from heat, cool, and strain.
- Add syrup, to taste, to the brewed and chilled earl grey tea.
- Serve over ice.
