I love comfort food.  The cold days of winter just make me want to put a pot of soup on the stove, break out the bread machine, and huddle up with the family.  You too?  This recipe for corn sausage chowder is delicious.  And easily thrown together at the end of the day.  If your house is as busy as ours, those are magical words.  Let me tell you how to make this yummy soup.

Gather your ingredients.  One pound of pork sausage, 1 cup coarsely chopped onion, 3 cups 1/2-inch pieces red potatoes, 2 cups water, 1 teaspoon salt, 1/2 teaspoon dried oregano, 1/8 teaspoon black pepper, one 15 1/4-ounce can whole-kernel corn {drained}, one 14 3/4-ounce can creamed corn, one 12-ounce can evaporated milk {I always use fat free}.

In a large pot, cook the pork sausage and onion until the sausage is brown and the onion is tender.  Drain well or later you’ll have a layer of grease floating on top of your soup.

Stir in the potatoes, water, salt, oregano, and pepper.  Bring to a boil, reduce the heat and simmer, covered, for about ten minutes or until the potato pieces are tender.

This looks great! Going to make it this week. How much water do I add though? I can’t find the amount on the recipe. Thanks!

2 cups. It’s up there in the second or third paragraph but you probably skimmed right over it. Enjoy!
