Rustic Hand Pies

I had some leftover crusts and pie filling after making the pies in jars for teacher appreciation, so last night I made rustic little hand pies.  And how timely … did you know today is National Apple Pie Day?  I didn’t.

{Don’t you love the word rustic?  It’s like an excuse for imperfection.}

I divided the remaining dough into seven pieces {for the seven members of our family} …

… then rolled them out into something vaguely resembling a circle.

I put a dollop of pie filling {apple or peach} on each circle and added a sprinkle of cinnamon …

… then folded them in half, pinched the edges together, and pressed a fork around the edges.

They baked at 350 degrees for about ten minutes and came out flaky and golden.

It was a delicious dessert and my kids requested another batch right away.  This one was a hit at the homestead and I’m sure we’ll try a few variations in the weeks ahead.

    Wow! I loved how you didn’t waste the left overs, but enjoyed the rest with your family. I always make sure that when I make a baked good for someone, I make a batch for mine. Thanks for sharing with us 🙂

    Ohhh this looks so yummy! We make similar pies when out camping…except we use bread and pie filling in our camping pie makers! Yummmmm!!!
