Loaded Chorizo Fries Recipe

Fries are definitely one of the best inventions and even better when topped with all kinds of delicious and savory ingredients.  This loaded chorizo fries recipe is so darn good that my mouth waters just looking at the picture.  Like most of the recipes at Dukes and Duchesses, this one is quick and easy and perfect for game day, snack time, or even a quick and easy weeknight dinner.

To make a batch of loaded chorizo fries, you’ll need a package of frozen waffle fries {regular fries will work too but waffle fries make it easier to get a mouthful of toppings}, a package of pork chorizo, green onions, mozzarella cheese, cilantro, sliced pickled jalapeno peppers, and guacamole.

Bake the fries according to package directions and while they’re baking, cook the chorizo sausage.

In a skillet over medium high heat, crumble and cook until the chorizo is fully cooked and lightly browned.

When the fries come out of the oven, leave them on a baking sheet or transfer them to a platter if you prefer a nicer presentation and then start topping with the other ingredients.

Sprinkle with the mozzarella cheese {if it doesn’t melt right away, pop it back into the oven for a minute} …

… top with the crumbled, cooked chorizo …

… and sprinkle with the chopped cilantro and sliced green onions.

For a bit of additional flavor, serve with bowls of sliced jalapeno peppers and guacamole {homemade or storebought} …

… and dig in!  These loaded fries will have everyone quickly reaching for more!  In fact, you may want to make two platters!

Loaded Chorizo Fries

Yield: 4-6 servings
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes

Waffle fries topped with savory chorizo, mozzarella cheese, onions, and cilantro, and served with jalapeno peppers and guacamole.

Ingredients

  • 1 package waffle fries
  • 1 package pork chorizo
  • 1 cup finely shredded mozzarella cheese
  • 3 green onions, sliced
  • 1/4 cup cilantro, coarsely chopped
  • 1 cup sliced pickled jalapeno peppers
  • 1 cup guacamole

Instructions

  1. Cook the waffle fries according to package instructions.
  2. While the waffle fries are baking, in a skillet over medium-high heat, crumble and cook the chorizo until lightly browned and fully cooked.
  3. When the waffle fries have finished baking, keep them on the baking sheet or place them on a platter and sprinkle them immediately with mozzarella cheese.
  4. Crumble the cooked chorizo sausage over the fries.
  5. Sprinkle with the chopped cilantro and sliced green onions.
  6. Serve alongside bowls of guacamole and sliced pickled jalapeno peppers.
