Easy summer meals mean hot dogs on the grill at our house. A few weeks ago I shared a simple idea for a hot dog bar with Ball Park Park’s Finest hot dogs and today I want to share one of our favorite sides for a hot dog dinner: creamy potato salad. This recipe is simple, classic, and the perfect accompaniment for a grilled dinner.
Set up a hot dog bar, add some grilled watermelon and a variety of hot dog toppings, and whip up a big bowl of creamy potato salad for the perfect summer meal.
To make this potato salad, chop three pounds of red potatoes into large chunks and boil until tender in slightly salted water. Drain the potatoes and run cold water over them until cool.
Add 1/2 cup sour cream, 1/2 cup mayonnaise, 1/4 cup chopped fresh dill, the juice from one lemon, 2-3 sliced green onions, and salt and pepper to taste.
Toss gently to mix and serve immediately or cover and chill until meal time.
Pour the lemonade and sit back for a delicious but simple summer meal!
