Creamy Coffee Cooler

It’s always the right season for coffee but now that the warm weather is hitting, it’s the season for cold coffee.  This creamy coffee cooler is a super simple recipe but so delicious that it’ll quickly become a summer favorite.  It’s the perfect afternoon pick-me-up and sweet treat all in one!

All you need to make it is International Delight iced coffee {the mocha or plain flavor works equally well and you can find both in the refrigerated coffee creamer section of your grocery store} and frozen cool whip.  I also like to add a tablespoon of instant coffee to ramp up the strength of the coffee flavor {and the caffeine content} but that’s completely optional.  The coffee cooler is really good without it as well.

In a blender, combine one cup iced coffee and one cup frozen cool whip {don’t thaw it first}.  If you want to add the extra instant coffee, add it at this point and blend all three ingredients until the instant coffee is dissolved and the mixture is well blended.

Serve in a mason jar or a cute summer glass with an extra dollop of cool whip if desired {it’ll sink down into the drink but it’s still yummy}, add a couple of patterned paper straws, and pull up a chair on the patio.  Sip that creamy coffee cooler and enjoy the warm summer months.  Cheers!
