If your family is like ours, the dinner hour is often a rush. We try to always sit down together but we’re often racing to get to soccer practice or a basketball game and finding a quick meal can be difficult. This mac and cheese with butternut squash is a quick and simple meal and everyone in our family likes it … and it even includes some veggies which makes it a definite win, right?
To make it, you’ll need a box of Horizon Mac & Cheese, 2 tablespoons butter, 1/4 cup milk, 1 cup diced, cooked butternut squash {fresh or frozen works equally well}, 1/2 cup shredded cheddar cheese, and pepper.
Cook the Horizon Mac & Cheese according to package directions …
… and, once the pasta is cooked, add the butter, cheese sauce, and milk as instructed on the box.
Stir in the cooked butternut squash. If your kids will grimace at the idea of vegetables in their mac and cheese, puree the butternut squash and stir it in until well mixed. Add freshly ground black pepper to taste.
Serve in oven-safe dishes then sprinkle the top of each with shredded cheese and place under the broiler for 1-2 minutes or until the cheese is lightly melted.
Serve and wait for the quiet sound of kids NOT complaining about dinner!
