The Best Fajita Marinade Recipe

We had fajitas on New Year’s Eve and I realized I’ve never shared this fajita marinade recipe with you.  It’s truly the best fajita recipe ever and it works equally well on chicken or steak.  Yum!

The recipe was given to me by a dear old friend at least ten years ago and I’ve never used another one … why mess with a good thing?

Fajita Marinade

1/2 cup lime juice {bottled is fine}

1/4 cup vegetable oil

3-4 medium jalapeno peppers, seeded and chopped {this won’t make them spicy, it just adds really great flavor}

3 garlic cloves, minced

3 tablespoons fresh cilantro, chopped

2 teaspoons chili powder

1/2 teaspoon ground cumin

1/4 teaspoon salt

Marinate meat of choice for at least one hour {I usually marinate it all day}.

I grill the meat and then serve on warm tortillas with sauteed green peppers and onions, cilantro lime rice {this recipe is really good}, sauteed jalapenos, shredded cheese, and guacamole.  Never forget the guac.
