A Soup Swap {Third Annual}

Yesterday I hosted my third annual Soup Swap!  It’s an event I look forward to every year {to see past soup swaps, click here and here}.  Friends come over, we have lunch together, and we swap soup.  Fun, huh?

And it’s so easy to pull off.

Some bread on the side and lunch is served.  Such a simple way to host friends.

But the best part is loading up your basket with containers of soup!  We’ll all be eating warm soup for lunch over the next week or so.  {To see the soup I swapped, click over to yesterday’s post.}

Want to make the Potato Crab Chowder I served at lunch?  Here’s the recipe.

Potato Crab Chowder
Serves 6
2 tablespoons butter
1 cup chopped onion
3/4 cup chopped celery
1 garlic clove, minced
3 1/2 cups cubed red potato
3 tablespoons all-purpose flour
2 1/2 cups milk
2 teaspoons chopped fresh thyme
1/2 teaspoon freshly ground pepper
1/4 teaspoon nutmeg
1 can {14 3/4-ounce} cream-style corn
1 can {14-ounce} chicken broth
8 ounces lump crabmeat
3 tablespoons fresh parsley
1 teaspoon salt
Melt butter in a large saucepan over medium-high heat.  Add onion, celery, and garlic; saute 4 minutes.  Add potato; saute 1 minute.  Sprinkle with flour; cook 1 minute, stirring constantly.  Stir in milk, thyme, pepper, nutmeg, corn, and broth.  Bring to a simmer over medium heat, stirring frequently.  Cover, reduce heat, and simmer 20 minutes or until potato is tender, stirring occasionally.  Stir in crab, parsley, and salt.  Cook 5 minutes, stirring occasionally.
